Happy Friday!!! Are you looking forward to the weekend as much as I am? It’s been a long week to say the least. During stressful weeks I tend to even wake up hungry so I have been savoring this yummy start to the morning this week and thought it was the perfect time to share!
For the longest time I just didn’t bother trying to make breakfast, but then I gradually started to grab a breakfast or granola bar, then I attempted a toasted bagel and still had plenty of time to get to work (surprise surprise), and finally I graduated to my current favorite – the breakfast bagel!
While I’m getting ready for work I don’t want to turn on the stove or oven or anything that takes time, so all of this sandwich is made in the toaster or microwave. Quick cook-and-forget type of stuff. I don’t eat breakfast at home so I wrap it in a paper towel and throw it in a baggie or food container and head out the door, where it holds up pretty well during my 10 minute drive to work.
I toast my bagel to golden brown. In this picture I’m using a plain bagel, but I’m also very fond of Everything bagels if I can get my hands on them. Then I slather cream cheese on the top side, place my microwaved egg on the bottom side, and a tasty sandwich is made when the two halves come together!
Quick Breakfast Bagel Sandwich

Ingredients:
1 Bagel 1 Egg 1 Tbsp. Cream cheese spread Salt and Pepper to taste Olive oil
Instructions:
- Toast bagel to desired toastiness
- Meanwhile, add a small amount of olive oil to a microwave safe bowl and swirl around to coat the bottom and sides
- Crack egg into oiled bowl. Pierce the egg yolk with a fork 3 or 4 times, if you don’t do this it will try to pop in the microwave. Season with salt and pepper to taste
- Microwave egg for 45 seconds. This will fully cook the egg and yolk, if you want a runnier yolk you can cook it for a shorter time, I’d recommend about 40 seconds, as long as the whites are fully cooked
- Spread cream cheese onto the top half of the bagel and place the egg onto the bottom half
- Put the two sides together to make a sandwich
- Enjoy right away or wrap for a to-go breakfast sandwich
Tips:
- Try adding a couple slices of cooked bacon or sausage
- Use your favorite flavor of bagel, I love using Plain and Everything flavors of bagels for this recipe!
