Chicken Tatertot Casserole

I have been making this dish for ages, it was something I used to plop into my little one quart crockpot when I lived alone during my college internships, but now to make a normal amount I make it in the oven… it definitely won’t fit in that tiny crockpot anymore.

For this you’ll need 2-3 good size boneless & skinless chicken breasts. A can of cream of mushroom soup, and a can of cream of chicken soup. A standard size bag of tatortots. And to top it off, some cheddar cheese!!

Seasoning the chicken become a fun game in this recipe as it can add a lot of flavor to the dish. For this version listed I use a generous amount of salt and pepper prior to cooking to bring out that natural flavor. I’ve also used Lowry’s Seasoning salt, which is fantastic, and my current favorite the Montreal Chicken seasoning by McMormick! Any great chicken seasoning will help kick up the flavor of you wish. You can also try brining in salt water or pickle juice (trust me it’s amazing) overnight.

Chicken Tatertot Casserole

Ingredients:

  • 2-3 boneless and skinless chicken breasts
  • Salt and Pepper to taste
  • 1 bag tatortots
  • 1 can Cream of Mushroom
  • 1 can Cream of Chicken
  • 1 C. Shredded cheddar cheese

Instructions:

  1. Preheat oven to 400 degrees Fahrenheit.
  2. Place whole chicken breasts on a baking sheet. Season with salt & pepper to taste. Bake for 20-22 minutes or until fully cooked.
  3. Remove cooked chicken from oven and chop into 1 inch chunks and place into a large bowl.
  4. Add cream of mushroom and cream of chicken and mix into the chicken to fully coat. Then mix in half your bag of tatortots and 1/4 of the cheese.
  5. Spread mixture into a 9×13 baking dish
  6. Top with remaining tatortots
  7. Bake for about 30-35* minutes at 400 degrees until the tots are fully cooked and below is nice and bubbly, then sprinkle over the top the remaining cheese and bake another 5-7 minutes.
  8. Allow to cool a few minutes before serving and enjoy!

Notes:

*I very this cooking time with the tatortots by following the time recommend to cook a full bag of tatortots. Some brands want closer to 25 minutes and some 35. Do what is recommended by your tatortots to cook them fully or they could still be cold in the middle.
