One Pan Shrimp and Asparagus

It’s been a crazy beginning of 2021, but now that spring is just around the corner I’ve been craving healthy clean foods and vegetables! I am ready to get outside and that means I have to feel good to do it.

Trying to eat healthier and less processed foods means that I end up doing a lot of meal prep to work around those busy weekdays. One meal thought that requires almost no ahead of time prep and is still quick and perfect for evenings is a nice and flavorful shrimp and asparagus! This quick recipe has become my quick meal plan for nights I don’t know what to do or am running short on time, with this I can usually have food on the table ready to eat in less than 20 minutes.

I like using large or medium shrimp, and since I’m trying to eat clean I look for wild caught shrimp to cut down on that sodium! I sometimes will opt for the pre-cooked variety as it’s quicker to just thaw and warm up in the pan than the uncooked variety. Both ways will turn out delicious but will take a little while longer to cook the raw than the pre-frozen variety.

For Asparagus, I try to find the thinnest shafts possible in the fresh bundles. I prefer the thin ones because they cook up quick to be nice and tender (my preferred texture of asparagus) and absorb more of the delicious seasonings per bite.

You’ll want to start pan frying the shrimp first since it takes a little longer to cook than the thin asparagus. Just heat up the avocado oil and add the shrimp and seasonings. Then when they are pink or warm add in the asparagus and a squeeze of lemon and it’s almost done!

This recipe is naturally gluten, egg, soy, nut, and dairy free but would not be considered fish/shellfish free due to the obvious shrimp involved.

One Pan Shrimp & Asparagus

2 Servings

Ingredients:

  • 1 Lb shrimp tail removed (thawed if frozen)
  • 1 Bundle fresh asparagus
  • 5 tsp Fresh lemon juice
  • 1 1/2 Tbsp Garlic powder
  • 2 tsp Pink Himalayan salt
  • 2 Tbsp avocado Oil

Instructions:

  1. Cut the woody ends off of asparagus and rinse under cold water for about a minute
  2. Add avocado oil to a large pan and bring up to medium/high heat
  3. Add into the pan shrimp, garlic powder, and pink salt. Stir and cook until shrimp has mostly cooked.
  4. Add the cleaned asparagus into the pan along with the lemon juice.
  5. Cover and let simmer for 2-3 minutes, stirring abou half way through to make sure it’s cooking evenly until the asparagus is to desired tenderness.
  6. Serve & enjoy!
