Breakfast Catastrophe

Happy Valentine’s Day! This year for Valentine’s Day I’m going to share one of my most beloved breakfast dishes! Breakfast should be a lot of things, but most of all it should be delicious and versatile! I’ve made this Catastrophe on the stove top, outside over a fire, and even in the microwave… yes, those good ol’ college days.

I first had a version of this as a child during a Girl Scouts camping event where the adults made this for our group. My recipe has morphed over the years to fit my tastes, but overall it’s stayed pretty much the same. It’s truly great because it’s essentially a whole tasty meal in one bite. Add a little toast or biscuits and maybe a side of bacon or sausage and it’s the perfect plate!

For my delicious Catastrophe, you just need three things: eggs, bacon, and hashbrowns. Cook it up and mix it all together then top as desired and you are all set to go! I use turkey bacon for the majority of the Catastrophe’s I’ve made, but it’s good with pork bacon or sausage as well. I also prefer using the hash brown patties, they seem to cook to the texture that I’m looking for, but you can definitely use shredded hash browns, or cubed hash browns if you wish.


Breakfast Catastrophe

Makes about 4 servings

Ingredients:

 8 Eggs
1/2 lb. Turkey bacon
6 Frozen hash brown patties
Salt & Pepper to taste

Instructions:

  1. Cook bacon in a skillet until cooked to desire and place on a paper towel lined plate.
  2. At the same time fry the hash brown patties in a little oil until golden brown. Cool on a paper towel lined plate.
  3. Once all the bacon is cooked remove a little of the bacon grease from pan (just enough that it doesn’t look like a standing pool) but not all of it. We want that flavor to stay. Turn the heat down but keep heating on the pan, we’re not done with it yet.
  4. Crack the eggs into a mixing bowl, add a little salt and pepper then beat eggs well.
  5. Pour the beaten eggs into the warm bacon pan. Cook the eggs in a scramble fashion.
  6. While the eggs are cooking chop or tear the bacon into chunks about 1/4 inch wide. Crumble or shred the hash browns into similar size chunks.
  7. Once eggs are almost fully cooked, when there is still just a little shine left on your scrambled eggs but they’re not runny, mix in the hash browns and bacon and cook about 2 minutes longer to allow the flavors to marry together.
  8. Top with salt and pepper if desired. Serve immediately.

Tips:

  • We like to fry up an egg, over easy or over medium, to top the catastrophe! It’s seen in the above photo served with two over medium eggs and cracked pepper on top!
  • It’s not limited to turkey bacon, try using pork bacon or breakfast sausage.
  • You don’t have to use hash brown patties, frozen shredded or cubed hashbrowns work well too!
  • Top your Catastrophe with any toppings such as cheese, green peppers, onions, or whatever else sounds great!
