Tacos don’t have to be boring without cheese or sour cream when you go top 8 + free! To add the extra flavor on without all the ingredients we are used to we looked to adding vegetables and other things to keep the flavor without losing the flavor.
I always go with orange and yellow bell peppers. They have the flavor we’re looking for without too much added spice or sweetness.
To make this I utilize my allergy free taco seasoning for both the peppers and the chicken. Then I find some allergy free taco shells, hard or soft, and add these delicious chicken and peppers with some safe refried beans and it becomes a tasty and safe meal.
Chicken & Pepper Tacos

Ingredients:
4 Bell peppers (about 1 lb. sliced) 1 lb. of Boneless skinless chicken breast 1 1/2 C. water, divided Taco Seasoning (find my allergy free recipe here) Corn taco shells Refried beans
Instructions:
Cooking:
- Trim the chicken breast and cut into thirds and put into a pan with about 1/2 cup of water. Cover and allow to cook. Turn once to cook fully.
- Meanwhile, cut the bell peppers into 1/4 inch slices and place into another pan.
- Add 2 Tbsp. of taco seasoning and 1/2 cup of water to the bell peppers. Cover and cook, stirring occasionally.
- When chicken is fully cooked remove from pan and shred with forks. Return to the warm pan with 2 Tbsp. taco seasoning and 1/2 cup of water, allow to cook until the sauce has thickened.
- When the peppers are soft and translucent they are ready as well.
Building:
- If you’re using a soft corn taco shell be sure to heat it as directed on the package so that it doesn’t fall apart immediately
- Take one corn taco shell, soft or hard, and smear a spoonful of refried beans across the bottom center
- Layer on chicken to cover then add bell peppers
- Repeat to fill the rest of the taco shells
Tips:
- Top with salsa or sriracha sauce to add a little spice of flavor
- If you’re having trouble with a corn tortilla falling apart at the bottom, sometimes no matter what we do they always crack at the bottom, we put it inside of a hard one for a double layered taco!
