Grandma Catherine’s Pancakes

Spending the night at Grandma’s as a child meant we got pancakes the next morning!! They were delicious and fluffy and covered in butter and syrup (or granulated sugar for my mom that didn’t like syrup). It was the perfect breakfast and one of my favorite food memories.

Grandma made her pancakes from scratch, no prepared biscuit or pancake mix. She also added love to her pancakes, which we decided must be the secret ingredient when we tried to make them ourselves as teens and they just didn’t taste the same.


Grandma Catherine’s Pancakes

Ingredients:

1 3/4 C. Flour
2 tsp. Baking Powder
1/2 tsp. Salt
3 Tbsp Sugar
1 C. Milk
2 eggs, beaten
1/4 C. Melted Margarine

or use:
1 egg, beaten
1/3 C. Melted Margarine

Instructions:

  1. Mix together the flour, baking powder, salt and sugar
  2. Beat together the eggs, margarine, and milk
  3. Add the dry ingredients to the wet and stir until batter is smooth
  4. Cook by pouring about 1/4 to 1/3 of a cup of batter onto a hot griddle or skillet
  5. Flip the pancakes one time when bubbles start to appear on the surface and pop to leave a hole in the batter.

Tips:

Top warm pancakes with butter, syrup, sugar, peanut butter, or your favorite toppings!

To make fun colored pancakes, like pictured above, add a few drops of food coloring to the batter after it’s been mixed!
